As noted previously, we took a little procreation vacay with Matthew and Laura (the procreation was only Adam and Mine) and Steph and Jody to Puerto Vallarta and had an absolutely splendid little trip. One of my favorite parts (outside of spending time with some of my fave folks) was the delicious Mexican food… fresh salsa, breakfast tacos, hot sauce on everything, and of course, fresh $.30 churros out of the back of a pickup in Bucerias. I have long fancied Mexican cuisine (which my mom attributes to having enjoyed a myriad of Mexican delights when I was in utero) and the trip was no exception. When we returned to Omaha, I found myself with a hankering for Chipotle and Roja (an Omaha restaurant) every day. It was a fantastic fiesta of flavors. Sadly, at week 7, due to a bad run-in with a piece of Qdoba chicken, my obsession with Qdoba and Chipotle subsided … in fact, I can barely drive by the chains without feeling a sense of barf coming on. I have still wanted certain Mexican including Hector’s, Julios, and others but the desire to hit up a Chipotle has gone to the wayside.
